Students in this course will learn how to grill Manhattan style at home with techniques used at the finest restaurants. In this class, students will explore the various regional cuisines of America: Texas BBQ, Yankee Pot Roast, California Cuisine, Cajun, TexMex, and vegetarian dishes. We'll even bring the beer to the cookout!

Come join our class in the heart of Little India. Students in this course will join us on a tour of the area and learn about the spices and ingredients of one of the world's most wonderful cuisines. Your instructor will discuss the culture of India and teach the ladies in the class how to wrap a sari. Once in our kitchen, students will learn to prepare classic foods of India from tikka masala, to chats, kurmas and pakoras.

In this class, students are introduced to classic Japanese foods, from basic miso preparations to simple steamed fish, from the simple flavors of soy to the more complex combinations of textures and flavors found in Japanese cuisine. Students will also learn to pair dishes for a classic Japanese menu, including sake.

In this class, students learn to roast, grill, fry and braise meats, as well as how to prep and carve them. In addition to exploring beef, chicken, and pork, lamb, veal, rabbit and venison are on the menu.

In this class, students not only learn to cook fish, but they learn how to identify freshness at the market, and to clean and debone fish. Cooking techniques are covered -- grilling, sauteing, steaming, poaching, and more -- so that students can apply the techniques to all types of fish and seafood.

The Moorish influence is evident through the use of saffron and cumin, as well as chorizo and sheep's milk cheese from the mountains and fish from the coastal areas of Spain.
